Quick and Easy Salmon Baked in Foil Packets

This easy salmon baked in foil recipe is truly one of my family’s favorite ways to prepare salmon. It is a very quick and easy recipe that I think will become a regular in your weeknight dinner rotation. Check out my recipe video as well.

I try to make fish for dinner at least once a week. Luckily, everyone in our family loves fish. And salmon is one of our favorites. It is a great all-around fish. It is high in omega-3’s and great for your heart. Salmon is also a great source of protein, vitamin B12 and D, and iron.

I have made this baked in foil salmon so many times and it never fails. You will need just a handful of ingredients for this recipe that you most likely always have on hand. It takes minutes to put together, and there are no dishes to clean up! Cooking the fish in foil keeps it super-moist.

Here is how to make them.

You will need:

  • Salmon (your choice, farmed or wild)

  • Tomatoes (I prefer using fresh tomatoes)

  • Onion (your choice, white onion (what I usually use for this recipe), red onion, sweet onion)

  • Salt, black pepper, Parsley and Oregano

  • Extra virgin olive oil

  • Lemon

  • Foil (pre-cut or roll)

This is all you need to make this delicious salmon recipe. I make it for 4 people so this recipe is for 4 but it can be easily modified depending on how many people are in your household. I have made this easy salmon for several dinner occasions and it is everyone’s favorite.


  • 4 (5 ounces each) salmon fillets

  • 3 tomatoes, chopped, or 1 (14-ounce) can chopped tomatoes, drained

  • 1 chopped onion

  • 2 tablespoons extra virgin olive oil

  • Salt and freshly ground black pepper per taste

  • 1 teaspoon oregano

  • 1 teaspoon parsley

  • 2 tablespoons fresh lemon juice


  • Preheat the oven to 400 degrees F.

  • Season the salmon with salt and pepper

  • In a bowl, combine the chopped tomatoes and onion. Add 2 tablespoons of extra virgin olive oil, oregano, and parsley.

  • If you are using pre-cut foil, get 4 sheets and place them on your working surface next to each other. If using a foil roll, cut 4 same length foil sheets (12x12 inches approx.)

  • Place a salmon fillet atop a sheet of foil. 

  • Spoon the tomato mixture over the salmon. 

  • Repeat this step depending on how many portions you will need.

  • Fold the sides of the foil over the fish and tomato mixture, covering completely.

  • Seal the packets closed.

  • Place the foil packet on a heavy large baking sheet. Repeat until all of the salmon have been individually wrapped in foil and placed on the baking sheet.

  • Bake until the salmon is just cooked through, about 25 minutes. Open the packets carefully (they will be very hot), and place them under your broiler for another 5-10 minutes. Check on them often to ensure nothing burns.

Using a spatula, transfer the foil packets to plates and serve. Squeeze some fresh lemon juice on them and enjoy!
