Easy Chicken Stir Fry Recipe

If you are looking for a quick and easy weeknight meal, stir fry dinners are the way to go. You get your protein and your veggies, in one pan and with easy cleanup! This easy chicken stir fry recipe takes less than 20 minutes to make and has become one of my family’s favorite and I hope you give it a try as well and it becomes a favorite in your house as well!

I love making this dish because it is easy, fast, and everyone in my family loves it! (which is not that easy to accomplish :) with two children that could be a bit picky sometimes). The ingredients are simple and can be substituted easily. This is a go-to weeknight meal when I do not have a lot of time to prepare a fancy meal that takes forever to make.

For this recipe, I used what I have on hand in my freezer, fridge, and pantry. I have also done several variations of it. I will include those below.

One very important thing for me when I look at recipes online is to make sure it feeds four adults or makes 4 servings at least. With two growing children, one of them a teenager that seems to be hungry ALL THE TIME, recipes with half a box of pasta, will just not do :).

What kind of meat to use?

I prefer to use chicken for this stir fry because I always have chicken in the freezer but also because it cooks fast. But if you would like to substitute the chicken with another protein, feel free to use pork, beef, fish, or tofu. Just keep in mind, the cooking time will vary.

What kind of vegetables to put in the stir fry?

And here is one of the best parts of making a stir fry..you can use any vegetables you would like or simply have on hand. I use some of our favorites like onion and peppers, but you can use any veggies including carrots, green beans, peas, broccoli, snow peas, and mushrooms.

Chicken stir fry sauce

I make my own sauce for this dish, but I have also in the past used ready- to use Stir fry Sauce by Kikkoman. I know! It is not the best but hey, it is ready and is there when I need it :). But the sauce is very important here and is what gives this simple dish a lot of flavors. I also top the dish with a homemade yogurt garlic sauce that brings it all together.

Here are the ingredients for the stir fry sauce:

  • Sesame oil – I love using sesame oil to sauté the veggies because it gives the dish a little bit of Asian flair. Keep in mind that sesame oil is very strong so use it sparingly.

  • Soy Sauce – You just have to use soy sauce when you make any stir fry. It is not a stir fry without it! It gives the dish a lot of wonderful salty flavor but make sure to use low-sodium soy sauce in order to control the saltiness of the dish!

  • Teriyaki sauce – The sauce adds a touch of sweetness and tang as well as that nice brown color to the dish. You are welcome to use a little bit (or a lot) of honey if you wish to substitute it for Teriyaki sauce.

I make an easy yogurt garlic sauce that we drizzle on top at the very end. It is amazing! Trust me and please give it a try. It is made of a couple of very simple ingredients that work so well together – Greek yogurt, mayo, garlic, and dill.

How to make Chicken stir fry

  • 1 lb. boneless, skinless chicken breast cut into 1-inch cubes

  • 1 tbsp olive oil

  • 1 yellow bell pepper cut into 1-inch pieces (or any color pepper you have on hand)

  • 1 onion cut into 1-inch cubes

  • 2 garlic cloves minced

  • salt and pepper to taste

Stir Fry Sauce

  • 1/4 cup teriyaki sauce

  • 3 tbsp low sodium soy sauce

  • 1 tbsp toasted sesame oil

  • Black pepper

Yogurt Sauce

  • 5 tbsp Greek yogurt

  • 3 tbsp Mayo

  • 1 minced garlic clove

  • salt and pepper to taste

  • 1 tbsp fresh dill (skip the dill if you do not like dill)

  • Add one tablespoon of olive oil to a large skillet or wok and heat over medium-high heat.

  • Add chicken (in batches if necessary) and season with salt, black pepper, and garlic powder. Cook for 3 to 5 minutes or until cooked through. Add the teriyaki sauce and 2 tbsp low sodium soy sauce. Stir to incorporate. Put the lid on and cook for 2 min. Remove from skillet.

  • Add 1 tablespoon of sesame oil to the skillet.

  • Add the chopped onion and pepper and cook, stirring occasionally, just until crisp-tender. Add garlic and cook for an additional minute. Add salt and pepper to taste. Add the rest of the soy sauce.

After a couple of minutes:

  • Add the chicken back into the skillet and stir to combine

  • Bring to a boil, stirring occasionally, and let boil for one minute.

  • Mix all the ingredients for the yogurt sauce

Serve with rice or pasta, if desired. Drizzle as much of the yogurt sauce as you wish.

I sure hope you give this easy chicken stir fry a try soon and you and your family love it as much as we do!
